This is one of my favourite recipes - not only is it dessert worthy delicious, but it actually requires zero prep effort. I like to call these my "do nothing potatoes."
-Sweet potatoes, washed and dried
-Ceylon cinnamon (great for regulating blood sugar)
-Pink sea salt
-Coconut manna or you favourite nut butter
-Preheat oven to 450.
-Wash and dry the sweet potatoes and poke holes with a fork or knife. To cut the baking time in half, cut the potatoes in half length-wise.
-Spray the skin or tops with high heat oil such as avocado or coconut oil. Bake for 45-50mins if whole, or 30 mins if halved.
-Season with cinnamon, salt and a dallop of coconut manna or nut butter for a satisfying side dish or nutrient dense dessert. Coconut manna has a deliciously sweet taste to it!
