SnS take on a Greek salad, but with a gut health twist 💁🏽♀️
1 cup farro
3 tbsp olive oil
3 cloves roasted garlic
1 cucumber, diced
1 bell pepper, diced
1 pint grape tomatoes, halved
1/4 red onion, diced
1 bunch parsley, chopped
Black olives (I used a lot because I love the saltiness)
1/4 block of @spreadem_kitchen classic cheeze block, crumbled
2 cooked chicken breasts, diced
1. Bring farro and bone broth (I use this instead of water for extra protein, collagen and gut love) to a boil. Reduce heat to low and cover for 10 mins. Remove from heat and leave for 5 more mins. Drain any excess liquid (I just drank it but you can store it for another recipe). Place farro in fridge to cool while you prep the rest of the salad.
2. Combine all you vegetables and drizzle with olive oil (I used @allofoils lemon flavoured EVOO) and juice of 2 lemons and mix. If you have a sensitive stomach or eating low FODMAP, omit the garlic and onions.
3. Mix in the farro, add salt and pepper to taste. Top with extra olives and cheeze crumble and enjoy!
