I used to be one of those people who hated salads. But that’s because #DietCulture taught me to avoid toppings and oil based dressings because of all the “unnecessary calories,” which leads to hating vegetables because they taste bland and boring.
Newsflash ⚡️⚡️⚡️ If you hate vegetables, you’re not doing them right. You NEED to add healthy fats for flavour AND satiety. Stop trying to trick your body into filling up on high volume, low calorie foods because that dry spinach salad is only going to leave you ravenous shortly after, which fuels the yo-yo binge/restrict cycle. Eating foods that are truly satisfying to your unique taste buds is one of the key principles to ending the binge cycle. You need to actually get enjoyment out of what you’re eating in the moment to stay mindful, rather than eating what you THINK you should be consuming on autopilot, while fantasizing about what you really want to eat later.
SnS Shrimp Salad Details 👇🏽
Marinate 1lb of shrimp in 1/3 cup EVOO, 1 tsp chili powder, garlic powder, salt and pepper, squeeze of fresh lime.
Drain and rinse a can of black beans.
Bring frozen sweet corn kernels to a boil in 1/4 cup of water and leave on the heat for 4-5 mins.
Chop up a bunch of cilantro, grape tomatoes, avocado.
Make the dressing with 1/4 cup EVOO, 2 tbsp fresh squeezed lime juice, dash of chili powder, garlic powder, salt, pepper, 1 1/2 tbsp honey, and a handful of the chopped cilantro.
Bake of air fry the shrimp at 425 for 5-6 minutes.
Add veg, shrimp and dressing to your favourite mixed greens and top with cheese (I used @spreadem_kitchen apricot, basil, chili cashew cheese) and tortilla chips (I used @latejulyorganic jalapeño lime chips).
