If you're sick of plain boring fish recipes, try out this satisfying twist on a basic salmon that comes together in less than 15 mins. We've had this on repeat for quick and satisfying weeknight dinners ever since trying it!
3 tbsp cream cheese (I used a vegan cashew one)
2 tsp hot sauce
1 lemon juiced
Dash of Cajun spice
A few handfuls of blanched spinach (or thaw out a frozen spinach bag - just be sure to drain all the water)
Slit the salmon leaving a little on each edge and stuff (I went a little overboard as you can see)
Top with avo oil, lemon juice and more seasoning
Air fry at 425 for 12 mins
Served with a stack of mashed potatoes whipped with ghee, garlic, parsley, salt and pepper.
PS the major 🔑 cheat code for fast mashed potatoes is I boil them and then use a handheld blender to whip them up in less than 2 mins. Overblending may cause a waxy texture so you can blend most of it and then mash the remaining few lumps.
