These #TacoTuesday bowls are so simple to throw together for a #basicAF dinner or meal prep for the week. The best part is that they are completely customizable to whatever you have in your fridge and pantry!
First, choose your base - we used plain white rice and mixed in cilantro and lime juice.
Next, prep your toppings - we used air fryer sweet potatoes and shredded cabbage.
While those are cooking, prep your protein - we pan fried cod seasoned in @sietefoods taco seasoning over high heat in avo oil for 2-3 mins per side. I also love this recipe with a breaded cod using panko or brown rice crumbs.
Next add the flavours - No tortilla chips, no problem. We sprayed @sietefoods tortillas with avo oil and seasoned with salt and roasted them at 425 for 10 mins for homemade tortilla chips minus the inflammatory oils and preservatives found in store bought versions. Then we added a pineapple pico de gallo (green peppers, red onion, pineapple and lime juice), peach salsa, and Suzie’s organic taco sauce.
Boom, #TacoTuesday is served.
