Slow cook your roast (I used @trulocal sirloin roast) for 24hrs with @organicbonebroth beef bone broth, garlic, and this @sietefoods carnitas seasoning. Once cooked, store it in the fridge with all the liquid to develop even juicier flavours.
Blend the following in a food processor
1 cup blanched broccoli pieces
1 cup fresh basil and parsley leaves
1/3 cup EVOO
1/4 cup Parmesan
1 lemon juiced
Salt and pepper
Spray broccoli and Brussels sprouts with avo oil and seasoning generously with garlic powder and herb salt and roast at 425 for 20-25mins.
While that’s cooking, sauté up sliced portobello mushrooms in onion, garlic and EVOO.
Dice up some fresh cucumbers.
Serve on top of wild rice, quinoa or add in some roasted sweet potatoes. Topped with vegan feta.
