SnS Twist on Animal Fries
2 @trulocal chicken breasts
1 @organicbonebroth jar
5-6 of your favourite potatoes
SnS spicy cashew mayo (recipe on blog)
1 tsp onion powder
1 tsp garlic powder
1 tsp dill powder
Salt and pepper
Avocado oil spray
1. Place chicken in an instant pot and cover with bone broth. Cook on high for 10 mins followed by 5 mins of natural pressure release. You can also do this in the oven at 375 for 25-35 mins.
2. While chicken is cooking, preheat to us oven or air fryer to 425 and slice potatoes into matchsticks, spray generously with avocado oil and season with salt and pepper. Cook the potatoes in an uncrowded tray in a single layer for max crisp. Air fryer takes approx 25 mins while the oven will take closer to 45 mins. Bonus tip - soak your potatoes for an hour before cooking and dry them really well for extra crisp.
3. Shred chicken with 2 forks and place in a casserole dish. Add the seasonings to the mayo and then pour enough into the casserole dish to cover all the chicken. I also topped mine with cheddar cashew cheese from @naturesfaremarkets Bake at 425 for 30-45 mins depending on AirFryer or oven use.
4. Top your fries with the pulled chicken and add your favourite pickled veggies and/or more SnS mayo
